Pumpkin and Date Loaf

Ingredients

1½ cups flour
1 cup sugar
1 cup pire pimpkin (canned)
2 eggs
1 tsp cinnamon
½ tsp salt
1 cup chopped dates
½ cup oil
1 tsp baking powder
1 tsp baking soda

Directions

  1. Pour boiling water on dates and set aside

  2. Combine all dry ingredients except sugar

  3. Mix together eggs and sugar

  4. Add oil and pumpkin

  5. Fold in dry ingredients

  6. Add chopped dates last and mix

  7. Pour into a loaf pan

  8. Bake at 350°F for one hour
