Creamsicle Dessert

Ingredients

¼ cup (60 mL)hard maragarine or butter
1 cup (250 mL)Graham cracker crumbs
1 Tbsp. (15 mL) granulated sugar
1 package (3 oz. / 85 g) orange-flavored gelatin (Jell-o)
1 cup (250 mL) boiling water
1 Tbsp (15 mL) lemon juice
2 cups (500 mL) Vanilla Ice Cream

Directions

Crust
  1. Melt butter and mix thoproughly with crumbs and sugar

  2. Reserve 3 Tbsp and spread remainder in bottom of a 8 x 8 inch pan. Press firmly.

  4. Set aside

Filling
  1. Combine jelly powder and boiling water in a medium bowl. Stir until jelly powder is dissolved

  2. Add lemon juice and ice cream. Stir until smooth.

  3. Pour over crust.

  4. Sprinkle reserved crumb mixture over top.

  5. Chill overnight or until firm.
