Rich Double-Chocolate Pudding

Ingredients

2/3 cup sugar (or Splenda)
¼ cup unsweetened cocoa powder
3 Tbsp cornstach
2 cups 1% milk
1 ounce square bittersweet chocolate (or 3 Tbsp chocolate chips)
1 tsp vanilla extract

Directions

  1. Whisk together sugar, cocoa and cornstarch in a medium saucepan.

  2. Gradually stir in milk over medium heat just until bubbly and thickened

  3. Remove from the heat.

  4. Stir in bittersweet chocolate and vanilla and cook for one minute or until chocolate melts.

  5. Pour into four custard cups.

  6. Cover with plastic wrap and chill for at least 3 hours before serving
