Polynesian Pineapple Chicken

Ingredients

1/3 cup ketchup
3 Tbsp soy sauce
3 Tbsp sugar
2 Tbsp wine vinegar
1 Tbsp cornstarch
1 Tbsp canola oil, divided
1 lb. boneless, skinless chicken breasts, cut into ½ inch pieces
1 Tbsp ginger (fresh peeled & minced preferred)
2 carrots sliced thinly
½ lb. snow peas
¼ cup slivered almonds
1 small can drained water chestnuts
1 small can drained pineapple chunks
