Pork with Orange and Cranberry

Ingredients

4 125g (4 oz) lean butterfly pork steaks
cracked black pepeercorns
1 tsp grape seed oil
Marinade:
1 cup (250 mL) fresh orange juice
2 tsp grated orange rind
¼ tsp ground cloves
3 Tbsp cranberry sauce

Directions

  1. Trim all visible fat from meat

  2. Combine marinade ingredients in a glass bowl

  3. Add meat and marinade for 1 - 2 hours

  4. Remove steaks from marinade and cover with peppercorns

  5. Heat oil in nonstick frying pan

  6. Cook steaks for 3-5 minutes on each side or until cooked

  7. Set steajs aside but keep warm

  8. Strain remaining marinade and pour into a sucepan.

  9. Bring to a boil and boil rapidly to reduce slightly

  10. Spoon sauce over steaks and serve
