Zucchini Meat Loaf

Ingredients

1 garlic clove, finely chopped
1 cup shredded zucchini
1 pkg. dry onion soup mix
1 cup bread crumbs
½ cup ketchup or chilli sauce
2 lbs. lean ground beef
2 eggs, beaten
1 beef cube dissolved in 1 cup hot water
Parmesan cheese (optional)

Directions


  1. Dissolve beef cube in water in large bowl

  2. Add all remaining ingredients (except cheese) and mix well

  3. Place in a 9"x9" baking dish

  4. Sprinkle top with Parmesan cheese, if desired

  5. Bake 1¼ hours at 325° F.


NOTES:
I used zucchini that I had shredded and frozen the summer before.
Makes a very moist (and tasty) meat loaf with a fine texture
